Potato Soup
4 Large potatoes diced
1 Small onion- diced
1 Cup whole milk (or you can use non-fat)
1 Cup diced ham
1/2 celery stalk- diced
2 Tbs Butter
2 Tbs shortening
salt and pepper to taste

Melt shortening in dutch oven. Add onions and celery and cook until
onions are opaque. Add ham and potatoes and enough water to cover
potatoes by 1/2 inch. Add salt and pepper. Gently boil till potatoes
are very tender. Add the milk and the butter heat till hot but not
boiling. Serve.
