Pizza-spinach omelette
2 eggs
90 ml (1/3 cup + 1 tbsp.) Milk
125 ml (1/2 cup) finely chopped spinach
Salt and pepper
1 onion, finely chopped
125 ml (1/2 cup) sliced mushrooms
1 hard boiled egg sliced
1 green pepper, sliced
125 ml (1/2 cup) blanched cauliflower and sliced
125 ml (1/2 cup) blanched broccoli and sliced
6 artichoke hearts in pieces
500 ml (2 cups) shredded cheese of your choice

Preheat oven to 170 ° C (325 ° F)
Beat the eggs in a bowl. Add milk and spinach. Mix well. Salt and pepper.
Pour on buttered pizza pan about 35 cm (14 in.) in diameter.
Bake about 15 minutes, until the omelet is cooked, that is firm but still runny.
Remove from oven and top evenly with onion, mushrooms, hard boiled egg, green pepper, of cauliflower,
broccoli and artichoke hearts.
Sprinkle with cheese and bake about 10 minutes, until it has melted.
