Muffin Cranberry / Orange
1 large egg
1/4 cup oil
1/2 cup sugar
1 cup chopped cranberries
Zest of one large orange, grated
A large orange juice mixed with water to 3/4 cup
2 cups flour
2 c. tsp baking powder
1/2 c. tea baking soda
1/4 cup oil

1/2 c. tea baking soda
Beat egg in large bowl.
Add oil and sugar.
Whisk to combine the ingredients.
Add the cranberries and orange zest and orange juice and stir.
Combine the 4 dry ingredients in another bowl.
Add this mixture to premier.Remuer just until moistened.
Nearly fill the greased muffin cups.
Bake at 350F for about 20 minutes.
Let stand 5 minutes before removing the muffins from the plate.
